Tarhonya
Two different recipes for Tarhonya (small egg barley noodles - check our website magyarmarketing.com In one recipe it is cooked on the stove top, the other is baked. They are great a side dishes for meats or with pvrkvlt
Tarhonya- stove top
1/2 lb of Tarhonya
2 Tblsp. lard or bacon drippings
2 Tblsp. minced onion
1 tsp salt
1/4 tsp black pepper
cold water (add vegeta or bullion cube) or use soup stock
Fry noodles in lard until a light golden brown. Add minced onion and continue to fry until onions are soft. Add cold water or soup stock to cover the noodles, add salt and pepper. Cook in an open pot over a low flame for about 20 min. until the liquid is absorbed. if noodles are still hard, add a little more liquid and cook until noodles are soft. Serve with meat or fowl. Paprika can be added for color.
Tarhonya - Oven baked
Saute 1/2 cup minced onion in about 1/2 cup chicken fat, lard, or bacon fat. Add 2 cups of tarhonya and saute until a light brown. Pour into a casserole. Add 3 cups of boiling soup stock or bullion. Water can be used. Season with 1 teaspoon of sat and a dash of pepper. Bake in a moderate oven 350 degrees until liquid has been absorbed and tarhonya is tender...about 1 hour. Casserole may be covered with foil for half of the cooking time.
